How to make itNibbles on the barbie

The Mild in its most ordinary job. Cook the nibbles plain, then pour the sauce over for the last few minutes so it sizzles onto the chicken instead of burning on the grill.

You'll need

  • 1 kg chicken nibbles (drumettes and wingettes)
  • 1 tbsp oil
  • 1 tsp salt
  • ½ bottle (about 125 ml) Kiwi Flame Mild, plus more for the table
  • Lemon wedges, to serve

Method

  1. Heat the barbecue to medium. Pat the nibbles dry with paper towels, then toss them with the oil and salt.
  2. Cook for 20 to 25 minutes, turning every few minutes, until golden and cooked through: no pink at the bone and the juices run clear (75°C on a meat thermometer).
  3. For the last 3 to 5 minutes, give the bottle a shake and pour the Mild over, turning the nibbles so they're coated. It'll smoke and sizzle. The sugar in the sauce can catch, so don't walk off.
  4. Pile them onto a plate with the lemon wedges and more sauce on the side.

Good to know

  • Use sauce straight from the bottle for the end and for the table, never sauce that's touched raw chicken.
  • No barbecue? Roast them at 220°C (200°C fan) for 35 to 40 minutes, turning once, with the sauce on for the last 5.
  • Medium works too, once the kids have gone off to play.
