Steak on the grill

A good steak, plenty of salt, a hot grill, and a brush of Hot at the end. It flares. That's the fun part.

How to make itSteak on the grill

Nothing clever. Cook the steak how you like it and let the sauce finish it on the grill, then leave a small pool of Hot on the side for dipping.

You'll need

  • 2 scotch fillet or sirloin steaks, about 2.5 cm thick
  • Flaky salt and cracked pepper
  • 1 tbsp oil
  • Kiwi Flame Hot (about 3 tbsp for brushing, plus more for the plate)

Method

  1. Take the steaks out of the fridge 30 minutes before cooking. Pat them dry and salt them well.
  2. Get the grill or a heavy pan properly hot. Rub the steaks with the oil.
  3. Cook for 3 to 4 minutes a side for medium-rare, turning once. Thicker steaks need longer.
  4. In the last minute of each side, shake the bottle and brush on the Hot generously. The oil in it will flare up, so stand back and use long tongs.
  5. Rest the steaks for 5 minutes on a warm plate, then slice, with a small pool of Hot on the side.

Good to know

  • Be generous on the grill. Some of it flares off, and that's where the char comes from.
  • Medium works just as well if Hot isn't your thing tonight.
